This is a cross disciplinary area and will need a team with diverse skill set to mature the design. I would say
* Physics - Understand basic principles of various approaches.
* Material science - Pick test material and manufacturing method to maximize conversion efficiency.
* Electrical engineering - A circuit to use the generated electricity.

I am assuming that you would buy solar panels and put a system together to supply power. If so, First thing I would recommend is to build a small panel, say 12V one amp. Buy doing that you would understand how the whole system works. also some of the quirks of the system.
That is how I learned . How you design the system depends on the application. A good understanding of how it works will be very helpful. Basic electricity knowledge is essential.

Photovoltaic (PV) systems
- Residential panel design layout at site and associated power production estimates - 2 year Associates degree in computer aided design and/or most engineering, physics, science and technology program
- Residential system sizing and configuration - 2 year Associates degree in an engineering, electronics, physics, science and technology program
- Larger commercial system design, collection or battery power storage - 4 year Bachelors of Science degree in Electrical Engineering or Physics
- System materials research & design - 4 year Bachelors of Science degree in Materials Engineering/Science - This would be working on improvements for system manufacturers

- Solar desalination systems and other solar heat concentration systems - 4 year Bachelors of Science degree in Engineering/Science: Mechanical, Materials, Physics, Electrical
