What do I need to take note during my internship?
I plan on taking note of my internship experience or track with Notion. What type of pages should I create? Currently, I have meeting notes and daily weekly reviews...What else should I add?
I am taking a PROJECT MANAGEMENT and SOCIAL MEDIA MARKETING internship.

Work backwards: Start with what you want to get out of the internship, i.e. what is your objective? Why are you even doing the internship to begin with? When you complete the internship, what are you hoping to have learned? For example, maybe your goal is "Figure out if I want to work in social media marketing."
From there, list out 3-5 concrete, measurable steps that, if completed, will indicate to you that you've reached your goal. For instance, if we use the example goal above, maybe your steps could be:
1) Have coffee with at least 3 people in my department and interview them about their jobs
2) Meet with my boss at least 5 times and discuss my career options
3) Attend one marketing conference
4) etc.

Meeting notes and daily weekly reviews have been immensely helpful in my own life. Besides that, you can create pages for :
1) To-do list: you can list everything you need, have to do, and plan to do here.
2) Contact list: you will likely meet many people with whom networking is vital for your career, hence remember to ask for their contact info.
You can also use applications such as Google Calendar, Google Keep Notes and Excel to keep more effective track of your internship.

Network. This is the key to be successful in live. The more people you connect with, the easier path you will have.
If you are doing an internship, ensure you connect with everyone around you and build a relationship with them. You never know were you will end up and the more people you know the more opportunities you will get

Adding to the answers above, take notes on accomplishments and milestones achieved by your influence/actions as well as risks and or conflicts mitigated/resolved during your internship.

First of all, depends on type of intership (field) .
For daily:
Teorically could you try to make a list of all action that you do [(in your mind), like a bulleted list] , during the day.
Then you try to do a summary at maximum of 2 rows, also less.
For Weekly:
Teorically could you try to do a summary at maximum of 5 rows, based on the daily summary.

Regard to Social Media Marketing i can't help you, but about the Project Management , could you try to do a real Summary List Week/day, using the real information .
For Instance:
Week 1: Start Project.
day 1: Definition of Timing and Budgeting.
day 2 : Definition the roles .
day 3 : Contact insterested parties.
day 4 : Monitoring and Checking about the progress.
day 5 : Updates and Changes.

Consider you areas of interest and developing topics/tabs and then build your internship notes around these interests. It may also be worthwhile to review your notes with your intern manager for some feedback on other areas that you should consider. This will help you to get a broader view of the industry and other current topics of interest.

During my internships, I like to log what I do every day and any new technology/platforms I work with. This way it helps me keep track at the end of the program of what I was able to accomplish.

I agree with Dario. It does depend on your field of study and its requirements. What I found helpful during my internship is a field documentation log. As title categories, place the date, contact(s), description of activity, and hours. I do know that when you have internships you must complete a specific amount of hours. Some fields may even require you to write a reflection. If they do, make sure that there is a section in which you reference coursework/assignments and how theory compares to practice (class vs. internship). Good luck with your internship.
