The question is back to you, how successful would you like your restaurant to be?
It is your own restaurant, you are running the restaurant to make a profit.
Every business has a good chance to make profit, but you have to spend the effort to do the research, control your food cost and labor, making delicious food, and have great network with all your customer.
Operating any business if not an easy task, but it is up to you how to make it a successful one.

That's a tough questions since working in your own restaurant could mean you don't earn any salary. I will really depend on how well the restaurant does. Just as a side note https://www.indeed.com/career/chef/salaries/LA says the avg. salary in Louisiana is $19.36/hr.
