The HVAC industry is actually very large and has many sectors within it. Your day to day experience in the industry is greatly determined by what sector you are in.
Someone who does service every day can start out at a shop, get supplies and their first call and start heading to each call. They will diagnose the problems, offer solutions and sometimes fix the problem right then or have to order parts for a return trip. Some companies dispatch right from home so you drive the company vehicle right from home to your first call. Installers may go to the same job site for days/weeks or even months at a time doing parts of the job every day until it's completed.
There's also specialty jobs within the industry like chiller technicians, supermarket refrigeration technicians and control technicians to name a few. These techs may travel more, work odd hours and be in higher demand.
I'm a service technician who also does controls. I've previously traveled the country for specific jobs but more recently decided to be more local. I dispatch from home as there is no office near by. I run 1-3 service calls a day as time allows in my service area. In that time I try to diagnose and solve the problem in the first trip, I do start ups for new equipment and I assist other companies with the methods of installing and controlling the equipment the manufacturer I work for sells them. Sometimes a problem can't be solved and I have to order parts for jobs. Then I have to coordinate a time I can return with the parts to finish the repair.

The typical day as an hvac tech running service calls. Is centered around customer service. The customer knows the air isn't getting cold or hot. So you'll trouble shoot the system and equiptment. Either fix the problem at that time or order parts to make the repair if the customer wishes.
Then it's on to the next stop. It could be new construction where your assembling the duct work and boxes to be hung in the attic (no drywall at this time). Running the lines etc and necessary wire for high and low voltage.
