It depends on the day. Every day is different, some days are packed with meetings on building new models, assessing the performance of a model, or planning on how to build a model based on business requirements. Some days you are in the trenches building the modeling by looking into the data, debugging code you wrote, or presenting your model findings to stakeholders. The day-to-day of data science is not how youtube suggests it is. Also, every day is different depending on the company. Some companies are very mature in their data science infrastructure and approach whilst others are just getting started.

The biggest part of the data science process is getting familiar with the data (data discovery) and exploring how to process the data to work the way you need it to (feature engineering). Those two together are probably 80% of the actual data science time.

earlier in your career, more of your work time will be dedicated to actual data science. After a few years, a greater percentage of your time will be dedicated to planning, talking with clients, or managing data science efforts for others.
