Well let's say the reason why is within ourselves, in most cases we are the ones who put ourselves on whatever job your not happy with. With the been said its always to know what we are getting into before committing to it. Doing research on every aspect of the job you are applying to could save you or aleast warn you about it.

This is a great thought/question. I think part of this begins with the mindset we have going into work. If you go into a job with appreciation for getting to provide for yourself and a desire to improve , I think you will find yourself in a role you love eventually. I find that many people are content to just exist and complain rather than doing the work to improve their situation.

This can depend on many factors.
What college degree you have- Are you in a high demand field such as Accounting and finance? Or something else like Psychology or Biology?
Your network- Do you know friends or other professionals that can help with your job search? Some opportunities are opened up after a friend or family member tells you about it and can give you insight on the company.
Change/Seniority- After some point, some individuals will not consider changing their job because its a safety net and they already established their credibility to management. If you are working at a company for over 10 years, there is a higher chance you will stay compared to a employee only working 2-3 years in the same position. When you change jobs/companies, you need to prove your skills and build relationships with your coworkers, which can be difficult for shy people.
What factors are most important to you when accepting a job? Money, benefits, challenge, company culture etc. Some people will stay at a job because they love the benefits or pay, but its not something that provides satisfaction.
Limited opportunities- You may be looking for the ideal job- such as Accountant or Lab technician, but there are only so many positions in the city/area you live in. If you do not have the qualifications or there were better people that applied, you may not get an interview.

Consider what activities truly ignite your passion. Reflect on the type of work you would be willing to do even without financial compensation. If there's something you love so much that you would do it for free, it's highly probable that you'll excel in any career path related to that field. Remember to persistently pursue your passion, and in due time, your efforts will be rewarded. After all, 'Fortune favors the Brave'.
