During my interview for a cosmetology position, I was asked to demonstrate some of my skills on a mannequin, such as cutting and styling hair. I was also asked about my experience working with different types of clients and how I handle challenging situations. Overall, the interview was focused on my technical skills, passion for the beauty industry, and ability to work well with others.

In addition to Pamela's answer, you may be asked to bring along someone to showcase your skills on. Being personable is a quality many salons look for in addition to being able to pick up the slack if a colleague is sick and clients can not be rescheduled.
