I want to learn more about Architecture as a career, as well as receive tips on how to apply to internship and do well on interviews

Yes, Architecture is one of the most exciting and satisfying careers that one can choose. I will provide you with some advice but I have assumed that you are in high school because if and when you are in college as an architect major, that is where you would learn everything you'll need to know for a future career.
You are very fortunate to be living in New York City because there is much opportunity for high school students to explore the field of Architecture. There is a program offered by the Center for Architecture called Discover Architecture where you will be able to work with companies as a high school student to learn about the career. Then there are the Internships that you have asked about. I would advise that you obtain a list of Architecture firms in all five boroughs and either inquire in person or phone call to ask if they have an internship available for you. I suggest this because it is already June, things fill up very fast in New York City and an in person visit or phone call would be quicker and assured an answered as opposed to e-mailing where your inquiry could possibly be overlooked. The Internships for this field on Zip Recruiter are high paying and require the completion of your college degrees. It may be a good idea to check out the internships offered on Indeed and Linked In, too. Do not be discouraged. If an Internship is not available for you, volunteer work is always doable. You should inquire at the list of firms for volunteer work, too.
Also contact the New York City Department of Buildings as they offer internships and possibly volunteer work. Also visit Columbia University, NYU and Pratt Institute because they offer a chance for high school students to explore architecture and are the highest ranked schools for architecture. Another advantage of living in New York City is that you have three prominent museums that you can visit and inquire about volunteer work. They are The Skyscraper Museum, Cooper Hewitt Smithsonian Design Museum and the Center for Architecture (in Greenwich Village which also has educational programs). Remember that the focus should be on the work, not the career because you can't judge how your career will go. As long as you have a passion and drive towards the work, you will guide your own career, but first you must learn what architects do. I think these resources will help you become familiar with it and make it easier for you to decide. Try not to overthink it or worry about the future salaries, etc., focus on the work and that will give you answers about the career.
As for interviews, just be yourself. Learn as much about the field and company as you can before the interview and you should do well. I would ask the question "What architecture?" and then assess. But nevertheless, any Architecture role for that matter is utmost critical for the arena it belongs to. They are the base for everything that is built upon the work they do. But I would suggest you to assess things like - "Am I a person who understand the requirements of the business/ client?", "Can I do the exercise of gathering requirements and have conversations back & forth until the expected is arrived at?", "How are the opportunities in terms of finding new projects frequently as you finish your current ones?" etc.,
