What are some pros and cons of being a college professor in a more niche field of study? ?
I'm thinking specifically of classics.

The unfortunate thing about academia right now and especially Classics and the Humanities is that there are no tenure track jobs - at all. After spending years in school to get a PhD, my friends and I struggled with adjust and visiting positions, never knowing where the next absurdly small paycheck would come from and how far we would have to drive. I drove 2.5 hours to teach for a year for very low pay, always hoping a permanent position would come about. Many of us have left academia all together for the corporate world. It is really sad, and I would never discourage anyone from pursuing their dream, but there are no viable positions. You might be able to teach high school Latin at a private school, but not a lot else. Maybe consider Classics as a minor, so you can still pursue what interests you.
