You should check out University of Central Florida. They have an excellent Computer Science and Information Technology degrees.

Just about every college/university posts their courses online, along with degrees offered. Each degree program will also usually list all the specific courses you have to take, along with what kinds of electives you need. For example, a quick google search turned up University of Arkansas, Fort Smith for me. A quick search on their site turned up a pdf download for their BA in Animation Technology, listing every course you'd have to take, along with lists of "one of these" groupings. I'm sure there are scores more schools you could look at.
Remember that the courses should be part of your decision making, along with location, cost, size, financial aid offered, and probably several dozen more criteria.
