Kyah,
Your question has to be answered with several other questions. What type of restaurant? What type of cuisine? Are you serving breakfast lunch and dinner. What is your customer base? What is your location? These are most of the factors that would decide your hours of operation and the days you would be open. For instance if your restaurant is in an office building you would probably open for breakfast and lunch Monday thru Friday. But if you're in the suburbs you might be open only for dinner and open on weekends.

Kyah,
The working hours of your establishment depend on a lot of variables.
1. How large is the establishment, depending on how large the space it and how much your rent and capital will depend on the hours you need to be open? Therefore, some places are open 24/7.
2. depends on the employees you hire and their strengths and weaknesses
3. What type of cuisine will you be serving, can you prepare breakfast in the cuisine,
4. When you open the first 6 months is crucial, this will depend on or how many regular customers you have.
Lastly, what do you want to do? I have managed an upscale dinner type of place and although my hours were only 5-9 pm I was there working from noon until 11 pm.
Hope this helps

Hi Kyah:
My husband owns a restaurant. Pre-COVID, they were open 7 days a week, 9 am to midnight. Currently, they are open 6 days a week (no Mondays) from 11 am to 8 pm. Business is still very good, but it has been more difficult for them to fully staff the restaurant. Food costs are up, and staff costs are also higher than before now that restaurants have to compete for staff. It is a challenge time for the restaurant industry, but the places with the best food are still doing well. Good luck!
