Careers similar to pathology, immmunology, microbiology, etc. without a PhD?

I am interested in things like immunology, medicine, etc. however not willing to go to medical school, but want to make a decent salary. Looking for possible career paths. I am a senior in college graduating with a Biology degree, however haven't had any luck with lab internships to gain exposure

Unfortunately, most labs require certification and /or license which you may not qualify for with just the Bio degree. Look for a clincal lab science or Medical Technology program if you want to work in the lab. It'll probably only be another 1-2 yrs of courses and practicums since you have a biology degree. Or master's degree as a pathology assistant may be interesting.
I was a bio major and felt like my options were limited since I wasn't going to med school or research. I went back to school for clinical lab science and have had a decent career.

You can try fields such as biotechnology or biomedical which are related to medical field but does not warrant needing to attend medical school.

Have you looked into medical laboratory science and clinicals in that field? If you have a biology degree you may be able to get on the job training depending on the rules in your state. However I do think clinicals provide essential knowledge you'll need to perform your work. I believe New York requires licensure as well.

Medical laboratory scientists work with pathologists in the hospital laboratory to perform testing of patient samples. You will probably have some patient contact when collecting samples but most of the job is in the laboratory running specimens.
