When did you realize you wanted to become a head chef instead of a sous chef?

Mom had noodles and cooked them and they were tasty. Thats what inspired me

In order to become a head chef or executive chef you must follow the ranks. The ranks sometimes begin as the line cook, or sous chef. Sous means before. Being a sous chef will help you understand the position as you not only learn more cooking knowledge, and then also learn how to supervise the other cooks.
Only then can you become an executive chef (head chef).

You do not decide. You have to earn the title. If you apply for a chef's job and they give it to you, you are the chef. If you are the only person working in the kitchen you are technically the chef. The title of Chef is one you earn by going to school and then working for years to gain knowledge and respect. There are many people who call themselves Chef who are not. In Europe you go to school, then do an apprenticeship for three years the take a State exam. If you pass you can become a Chef because you have proven you have the knowledge. You have to decide to do the work needed. School is not 100% necessary but learning the job is. That takes time.
