You will have to pay your dues. You need talent, but mostly experience. Take a job at a nice restaurant and do work that you think is below your talent and excel at it. Then once you prove you can do it has to be moved up and keeps running the ladder eventually you will make it if you stay with it. It takes patience and timing.

Keep in mind that some states have requirements on age restrictions for what certain jobs you can perform (such as having to be a certain age to handling kitchen equipment and knives) and that may hinder your success a bit if you're not of a certain age yet.

Be polite and professional when applying. Fine dining establishments have a higher standard and expectations of their staff, and a lot of it has to do with the way you carry yourself and you interact with others. If you don't have a lot of experience, be honest about that on your resume, but highlight your skills and any relevant experience you may have.

Apply and ask to speak to a restaurant's hiring manager. Ask what positions they are hiring for and express your interest and drop off your resume, and be sure to follow up with them. Remember that working in high end restaurants and even fast food places are a lot of the same skill sets and you will ultimately be learning and handling similar situations.

The other variable is timing. Some restaurants hire early in the season and again when their seasonal workers head back to college/home. Some places may have already done all of their Summer hiring by now, but you won't know if you don't try.
