At my coffee shop, we have two shifts for our bakers. Someone comes in at 5:30 am to prep for the day by actually baking all the muffins, cookies, cakes, and other pastries we need. Then, around 9 am, another baker comes in and preps all the batters for the following day so that we don't need to make it all at once. While this might not be the case at every bakery, early mornings are almost guaranteed.

Alternatively, they could have a later start time.
