Are you completely new to cooking or do you have some experience? There's so many factors at play it's hard to give you specific advice. If you are a true novice, learn and get comfortable with a knife first. Handling and fabricating prep is your priority. If you already have knife skills in which you are comfortable with I suggest learning stocks, soups and sauce. Understanding these and the multitude of implications will not only help you understand flavor but also process development as well as application. Develop a keen taste of flavors, especially as it develops. Taste throughout the entire process; looking for flavor development and viscosity development. Keep a journal as well to record your process and thoughts. For books, honestly start with books they use at Culinary College; like the CIA or Johnson and Wales University. One is called Culinary Fundamentals and the other is Professional Chef. I wish you the best on your fruitful journey and thank you for your question.

Go to the culinary section of a library to finds books on food science and professional cook books.
Check out highly rated cooking schools to see if you can find recommended books on their syllabus. There is plenty of material explaining food science out there.

You can read any kind of books that you want cookbooks with recipes that you can try is a good way to start but it's trial and error you need to practice even reading a recipe you may not get it just right to start with so it takes practice and perseverance and the more you work at it the better you're going to get

Hi Benja! It is great to see you have found something you love! Carolyn is right! Start with some cookbooks and take some classes if you can! My daughter went to the Culinary Institute of America. They have a full library there. If you can get in touch with them, they might be able to recommend some beginner books for you. Good luck!
