The answers you received above are correct. There’s a saying that I have and this helps put into perspective how many colors one would expect.

If you want to make lots of money, feed the masses ( think Olive Garden, red lobster)

If you want be a Chef and play with Food, feed the classes (rich folks)

It will all depend on the day of the week, weather it's a holiday or some kind of celebration. Pattern in day to day customer counts can vary some State fairly close but others can vary a great deal. I have had days where I've had 350 to 400 people I've also had days when I was pushed against the wall with the lobby and the dining room being full from the time we open till the time we close

As a Restaurateur, Customer traffic is determined not only by the day of the week, but the season as well. During the holidays on Fridays and Saturday nights we’re doing 800 tops(plates). During the same season but on Tuesdays, Wednesdays and Thursdays we are doing 350 to 400 tops plates.)
