You will need to delegate responsibilities and quickly assess if those objectives are being met. There is a great deal of business involved. If the protein is consistently being plated raw, then you must communicate directly and switch the roles of your team to get the job done. Your reputation is constantly on the line. So, you will need to know how to execute each portion yourself and assign those roles to the best person. The only constant is change.
