I'm a Nigerian who wants to apply to a Canadian University to obtain an undergraduate degree and one of the requirements is my high school transcript but I have no idea what should be included in the transcript. Does anyone have an idea what my school should include in the transcript and how it should look like because the educational system in my school is very different from the ones in Canada. Also, should the academic records be from 10th grade or 7th grade?

I would recommend you get advice from the admission office of your chosen university directly to get definite information.

It is possible that you need to get your high-school education assessed and recognized. There are several agencies that do that, but you need to find out which ones are accepted by the university (it might vary by province or by university):

While you are at it you can also ask what information must be on the transcipt.
Typically it would be name of the school, your name and ID number or student number, courses taken, course number if there is one, year/semester taken, grade (out of?), pass/fail, graduation. I think it must be sent directly from the high-school to the university.
I would include everything from grade 7 because they would be interested in your trajectory.

Typically in your request an official transcript from your school, they will send a document that meets the requirements.

Although it all depends on the educational system of a given country, some characteristics are the same. In many cases, transcripts should include your grades, subject list, and some details about how many terms/years you studied each course.
Additionally, you can check the application guidelines of the institution you are going to apply to. If there will be still questions, you can contact their admission department and ask them directly about the details.
