Practice practice practice! Baking is such an exact science that there's little room for error. I recommend checking out the book The Food Lab by J. Kenji López-Alt. It goes into the science of cooking and baking and gives better understanding into how ingredients work, what heat does to them, etc. But overall, it's just about trying new recipes, making adjustments, keeping notes, and learning!

Well as per my experience practice! The more you do so , the more confidence you will get. Pre-planning in terms of the ingredients helps. You could watch a lot of youtube videos, blogs. You could note down the exact amount of ingredients you have used & tweak those slightly to see what suits you. There are some pre-requisites like pre-heating the oven, letting ur bake sit in the oven post baking for sometime etc. But most important, you need to relax & enjoy what your doing
