Regina, I will tell you the only way to improve your culinary skills is to practice. Every chance you get to cook, do it. The more you do it the better you become!! If you are wanting to learn Italian food or any other style I highly recommend you find a privately owned restaurant that specializes in that. A typical work day in a five-star restaurant is a long day. It usually starts around 11 in the morning and you will get off around 11 in the evening. You will spend your day prepping your station and prepping and specials the chef has coming from your station. Shifts are long and hard, but so much fun.

I would suggest you identify a couple places where you would enjoy working and maybe one that you don't. Ask the chef or a sous chef and offer to take them out for a coffee to talk about their experiences. Asking people about their history will surprise you how much most people will want to walk through their past (and possibly your future) with them. You will get great insights and lessons learned that will help you.
