What are things that you didn't know or didn't expect/wish you knew about culinary , baking or being a chef?

I really what to be prepared for when i go into what i want so it would be nice to know what are things you wish you knew about it.

I wish perhaps I went to school for culinary earlier , and invested or started a 401 k earlier in my career both would have benefited me greatly by now....

Tabitha,
Get a job the the industry first go to culinary school. I worked at McD's in high school so new of the hours that you have to work and sacrifices you you to make. working when all of your friends are going to parties. Because of these things i never really had any close friends. work fiends some i still keep in tough with but not many. To learn to have too be able to move into new jobs and that can mean new cities or states. How many restaurant jobs are there in Palmer or even Anchorage. i have lived in lived in 5 different states and 7 cities in my life. But I would not change a thing. as i get older i wish i did not have to work as many hours as I have to But i have been work 10 to 12 hour my whole so I'm used to it.
