Damian,
To answer your questions

1. How and where does an individual in your field get experience from?
Most of my experience came from school and research. The culinary arts field changes daily so keeping up on the trends locally and nationally can really help you in the long run. Get on linkedin.com there you can follow experienced chefs and learn from them as much as possible. I can do the same for you if you want, however, i may not be able to get to your questions as quickly as other chef might.

2. Does your career allow you to have time and money for things and Hobbies you love?
Time and money will depend on the avenue of culinary you take. Meaning, if you want to work at the local bar and grill as a line cook for your culinary life, then probably not. If you want to put in the time and dedication in earning your culinary arts degree, then earning your ACF or CIA certification, most definitely. These not only cost time, but money. So, if you can afford the time and money to get certified, you will not regret it.

3. What movie or book would you say best represents your current working environment?
Burnt with Bradley cooper. good, rated r movie. My work environment minus the drug and alcohol abuse, although I have seen many chefs lose everything, they have due to those problems.

Culinary is a Passion that you need to live in such that it becomes your Heart / Body & Soul
My Job is cooking, my hobby is cooking, my goal in life is to make people cook and feed the world with the best of my skills.
1. How and where does an individual in your field get experience from?
Post your academic education you can opt for a Culinary Art Diploma or Degree which can give you all the knowledge about the industry and get you ready for your career. There are a lot of Culinary schools around the USA aswell as around the world where you can learn the skills one of the best is LE CORDON BLEU below is the link to know more , https://www.cordonbleu.edu/usa/home/en
But real industry you will be able to experience during your industrial training, during your course. There are also a lot of Hotel Brands who also run a few courses where you can learn while you work which are Internship programs. (IHG , Accor , Marriot )

2. Does your career allow you to have time and money for things and Hobbies you love?
This is a tricky thing to answer as for sure we can find time & money for your hobbies and things you like but may not be in the same time frame as to the corporates. For example weekends when the most of the industries are having week offs we are the ones who make their time by providing services to them wherein we get to fulfil our things when they are working during the week.

3. What movie or book would you say best represents your current working environment?
Books by
Chef Anthony Bourdain (Kitchen Confidentials, A cooks tour, World Travel)
The Soul of a Chef by Michael Ruhlman
A wealth of Inside by Rahim B. Kanani
