Will it significantly affect me if i choose undecided for my major? What happens if I just take courses I’m interested in to figure out what I want to do?

I'm wondering what I'll have to prepare for

Mainly the Ivy League colleges.

If I go through with my current plans of being a mechanical engineering major in college then Im not quite sure what jobs would be available to me or which jobs would even be worth pursuing.
